On the other hand, ghee smoking point is around 482 °F (250 °C). That means you have about 132°F between the two burning points. How do you cook with clarified butter?

Easy: Just use it to replace oil or butter in your normal cooking. Ghee has a more intense buttery flavor than regular butter (which makes sense given that the water is gone) so you can use half the amount without sacrificing flavor.

You can also stir it into your coffee or spread it on toast (as Hart likes to do). Some people simply take a teaspoon of desi ghee in the morning.
